Is the Garmin eTrex 20 still the go to choice for GPS navigation for ultra racing? 

I can't find a better option that is battery powered.

I started that way and ended up with the 30 since there was so little price difference, at the time where ever I got it.  Don't remember where.  Some riders seem to be going towards using the GPS on their smartphone.

I have a smartphone, but intend to use the Garmin.  I guess it wouldn't hurt to figure out if and how I could load the route on my S4 phone as a backup.

I use the 30 as well.  I also have the Gaia Gps program on my iphone with all my needed tracks and waypoints loaded in case I lose or trash my gps.

etrex 20. could have gotten the 30... works well enough for my needs (no 'racing').
power it with batteries that you can find just about anywhere.

Any opinions on the Edge 800 (or 810) with a recharging provision with a dynamo hub/The Plug? 

I was thinking about this set up for lights/phone charging.  It looks like the Edge 800 is fairly cheap these days.

Etrex will run on dynamo and you have options on batteries for night running or if your charger fails. But I know a couple of Randonneurs using dynos and the 800s with good success.

I heard the 800 had crap battery life. My 705 will go like 16 hrs. The route setting can be a bit buggy though, and the controls aren't ideal.

I just got an Etrex 20 for the AA batteries and always on screen.  Was using an old Android phone and a nice mapping app called OruxMaps, but only got about 6 hours per battery.

I've found the 800 to be too unreliable, even regardless of trying to keep it charged.  I've lost tracks, had it lock up, etc.  Wouldn't trust it on a long trip or bikepacking race.

There are a number of things I'd love to see improved on the eTrex 20 or 30, but it's still the one I recommend most.
