Hey I just bought a Son 28 hub and am wondering what would be a good rim and spokes to have it built around. I'm looking for something light but durable and not crazy expensive. 27.5. 32 hole. Standard size not plus or fat. Thanks!

Your height, weight, bike, riding style, total load, and environment ridden in are all pieces of the puzzle.

Cool I'm 6 foot 3 inches and weight 175. I ride a hardtail. Do mostly endurance races in Pisgah and some bikepacking races like trans north Georgia and the Colorado trail race

Gotcha.  Stans Arch EX or MK3 could be good.  WTB KOM i25 could also be good.  Spokes will depend on the rim chosen.
