 icon_biggrin Today I bought a 2020 Giant Revolt 2 Gravel bike. 
 icon_biggrin I ordered bags on Amazon:
 sign13 Saddle,
 sign13 Top Tube,
 sign13 Bottom Tube,
 sign13 Handlebar. 

 sad2 But my Macbook cannot fit in the dimensions of the Saddle bag.  Do any of you carry a laptop (for video editing) while bikepacking?

Backpack would be your best bet. Wither that or go with a rear rack and panniers.
The reason that many don't use panniers is to keep weight down.

I prefer not to take mine while I'm backpacking, still when I need to I simply use a rack and waterproof pannier (for laptop, diary, notebook and other miscellaneous chattel).
